Ingredients

Method

1.Preheat oven to 180°C. Spread rice over base of a 6-cup casserole dish. Sprinkle over dried fruit medley.
2.In a bowl, whisk together eggs and sugar. Stir in milk. Pour over rice and fruit mixture in casserole dish. Dust with cinnamon and nutmeg.
3.Place casserole dish in a baking dish. Add enough warm water to come halfway up sides of dish.
4.Bake for 30-35 minutes, until centre is firm. To test if a baked custard is cooked, insert point of a knife into centre of custard. If it comes out clean, it is cooked. Remove from baking dish and serve with low-fat custard.
