Ingredients

Method

1.Preheat oven to 180°C. Line a 20cm pie plate (or a 20cm springform pan) with foil, allowing ends to overhang.
2.In a bowl, combine almond bread and butter alternative. Press firmly into base of prepared plate. Chill until required.
3.Make filling by beating cream cheese, egg, honey, sugar, rind and vanilla in a bowl with an electric mixer. Mix in sultanas. Spoon over base.
4.Bake for 25-30 minutes, until firm. Serve with cream and strawberries.

If you prefer a thicker crust, double ingredients and continue as directed. Remember this will increase fat and kilojoule counts.
