Method
1.In a bowl, using mixer, beat butter, sugar, egg and fresh ginger, to combine.
2.Sift in combined flour, ground ginger and baking powder, mixing to form a dough. Shape into a disc, wrap in plastic and chill 4 hours.
3.Preheat oven to moderate, 180°C. Line a large oven tray with baking paper.
4.Roll heaped teaspoons of mixture into balls and place on ray. Using the base of a glass dipped in flour, press down to flatten balls into thin rounds. Bake 8-10 minutes, until crisp and golden. Transfer ginger snaps to a wire rack to cool.
5.To make filling, in a bowl, using an electric mixer, beat all ingredients together.
For a cheat’s version, replace homemade biscuits with a packet of ready-made ginger biscuits or almond thins.
