1.Preheat oven to 170°C (150°C fan-forced). Place biscuits and zest into bowl of food processor and blitz to a fine crumb. With motor running, drizzle melted butter down spout. Press crumb mixture firmly with your hands into base and 2cm up sides of spring form tin. Refrigerate while you make filling.
2.In mixing bowl, place lime juice, yolks and condensed milk and whisk to combine. Add cream and stir to incorporate. Pour into biscuit case and bake 35 to 40 minutes – filling should be just set. Remove from oven and allow to cool before refrigerating until cold.
3.Once chilled. Remove from tin, slice and serve with whipped cream and a little extra lime zest.
