Method
1.Preheat oven to moderate, 180°C. Grease and line 9 x 1/2-cup ramekins.
2.In a large bowl, using an electric mixer, cream butter, sugar and vanilla together. Add eggs, one at a time, beating well alter each addition.
3.Sift flour and ground ginger together; fold into creamed mixture with milk, almond meal and glace ginger.
4.Drizzle 1 tablespoon golden syrup into base of ramekins. Spoon pudding mixture equally into ramekins over golden syrup.
5.Cover ramekins tightty with baking paper, then toil. Place into a baking dish; add enough boiling water to come halfway up the sides of ramekins.
6.Bake 25-30 minutes, or until a skewer inserted into puddings comes out clean. Turn puddings onto plates. Serve immediately, with thick cream.
Some sultanas or chopped dates would be delicious in the pudding.
