1.Heat a little oil in a heavy-based saucepan on medium. Cook onion; 3 minutes, stirring, until soft.
2.Add curry powder and flour; cook, stirring, 1 minute. Add milk and slowly bring to boil, whisking until sauce begins to thicken.
3.Stir in apple and chutney; simmer 3 minutes. Add chopped coriander; season to taste.
4.To serve, arrange egg halves on steamed rice. Spoon over curry sauce; top with extra coriander and onion rings.
