Method

1.Preheat oven to 180°C. Lightly grease a scone tray.
2.Sift flour and salt together into a large bowl. Add butter. Rub in lightly using fingertips.
3.Stir in 1/2 cup parmesan, olives and chives. Make a well in the centre of flour. Pour in milk all at once. Using a butter knife, mix quickly to a soft, sticky dough. Do not over-mix.
4.Turn onto a lightly floured surface. Knead lightly. Form into a round. Place on prepared tray. Brush with milk and sprinkle with remaining parmesan.
5.Bake for 45-50 minutes until damper is golden and firm. Cool on a wire rack. Serve warm with butter.
