Ham, spinach and jalapeno pizzas

Quick and easy, these pizzas are just the ticket for a lazy lunch or laidback dinner - just throw in a salad! A great way to use up leftover Christmas ham.

Method

1.Preheat the oven to 200°C (180°C fan-forced). Line a baking tray with baking paper.
2.Heat the oil in a frying pan. Add the spinach; cook for three minutes or until soft, turning occasionally.
3.Drain the spinach, then divide between pizza bases, spreading evenly. Top with the ham and mozzarella; sprinkle with the jalapeno chillies.
4.Place on prepared trays and bake for 15 minutes or until the cheese is golden brown.

Other tasty pizza combinations using ham include: Fresh cherry tomatoes, brie and basil with ham, Caramelised onion and mozzarella with ham, Sliced bocconcini and pesto with ham, Marinated artichoke and smoked mozzarella with ham. You could also used sliced deli ham for this recipe.
