French turkey and asparagus crepes

These light and fluffy crepes are absolutely beautiful wrapped around tasty turkey breast, oozy Jarlsberg cheese and fresh asparagus. Enjoy this savoury French dish for breakfast, lunch or dinner.

Ingredients

Method

1.Sift flour and a pinch of salt into a bowl. Whisk in egg. Stir in half of milk, until smooth, then remaining milk and 1/3 cup cream.
2.Heat a non-stick frying pan on medium. Brush with a little butter. Add 1/4 cup of batter and tilt pan to cover base. Cook 1 minute, until bubbles appear. Turn and cook for another minute. Repeat to make four crepes.
3.Preheat grill on medium. Top each crepe with turkey, jarlsberg and asparagus. Roll to enclose. Place in a heatproof dish, pour over 1/2 cup cream and sprinkle with cheddar. Season with pepper. Grill 3 minutes, until cheese melts and cream is bubbling. Serve immediately.
