With vibrant colours, this delicious capsicum and onion focaccia with caramelised onions, crumbled feta and basil makes a tasty lunch to serve for loved ones during the weekend
1.Preheat oven to 180°C (160°C fan-forced). Lightly grease a 30 x 20cm (base measurement) slice pan.
2.Heat oil in a large frying pan over moderate heat. Add onion; cook, stirring, 8 minutes, or until soft. Add brown sugar and capsicum; cook, stirring, 8 minutes, or until caramelised.
3.Meanwhile, combine caster sugar, salt, garlic, yeast, flour, extra oil and warm water in a large bowl. Turn dough onto floured surface; knead 5 minutes, or until smooth. Press dough into prepared pan; spray with oil.
4.Top dough with onion mixture and feta; bake 20-25 minutes, or until browned and cooked. Sprinkle with basil. Serve.
