Method
1.Place cabbage in a bowl and cover with boiling water. Leave for 1 minute, then drain well.
2.Transfer cabbage to a large bowl with potato, onions, cheese and mustard. Mix well. Season to taste. Divide mixture into eight patties.
3.Heat butter and oil together in a large frying pan on medium. Fry patties in two batches, 2-3 minutes each side, until golden and crisp. Drain on paper towel.
4.Serve patties with bacon, pan-fried tomatoes, spinach and egg. Top with extra green onions.
