Bolognese sauce

Method

1.To make sauce: heat oil in a frying pan over high heat. Saute onion and garlic 5 minutes, stirring constantly. Add mince; brown well. Add mushrooms and tomato paste. Cook, stirring, 1 minute. Blend in diced tomatoes and red wine; season to taste. Simmer 15-20 minutes. Stir in chopped parsley.
2.Set aside 1 cup of bolognese sauce for this recipe. Freeze the remainder for another dish. Preheat oven to hot, 200°C. Line 2 oven trays with baking paper.
3.Sift flour into a large bowl. Add butter; using fingertips, rub in lightly until mixture is combined.
4.Make a well in centre of flour mixture; pour combined milk and water in all at once. Using a palette knife, quickly mix to a soft, sticky dough; turn onto a floured surface and knead lightly.
5.Break dough into 8 equal-sized pieces; on a floured surface, press or roll out into rounds about 0.5cm thick.
6.Place equal amounts of bolognese on one half of rounds; sprinkle with cheese and parsley. Fold over dough, pressing edges to seal. Place on trays. Brush with egg; bake 10-12 minutes. Serve with salad and sauce.
