Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease a 20cm ovenproof pan.
2.Heat butter in a large frying pan on high. Saute spinach 2-3 minutes, or until wilted. Season to taste. Mix tomatoes through.
3.Arrange spinach mixture in pan and make 4 shallow recesses in mixture.
4.Crack an egg into each recess and drizzle cream around. Season to taste and sprinkle with parmesan.
5.Bake 20-25 minutes, or until egg whites are set. Sprinkle with a little nutmeg and serve with toast and bacon.
