Any-time-of-the-day eggs
1.Cover potatoes with cold water and simmer for 10 minutes or until just tender.
2.Heat oil in a large non-stick frying pan on high. Cook potato for 5 minutes, until golden. Add tomatoes and green onion; cook for another minute, until heated through.
3.Push potato and tomatoes aside to create two spaces and break eggs gently into spaces. Cook for 1 minute, until whites are set. Season to taste and scatter with basil leaves. Serve with toast.
