Caramelised onion and feta tarts

It'll only take you 10 minutes to prepare these starters before popping them in the oven. With salty feta and sweet caramelised onions on top these tarts are a fantastic savoury snack.

Method

1.Preheat oven to 220°C (200°C fan-forced). Line an oven tray with baking paper.
2.Heat oil in a saucepan on low. Cook onion and thyme 20-25 minutes, stirring occasionally to prevent burning. Stir in vinegar and sugar; cook further 10-15 minutes, until thick and “jammy”.
3.Using a 7cm round cutter, cut out pastry circles. Arrange on tray; brush lightly with egg. Bake 5-7 minutes, until puffed and golden. Cool slightly on trays.
4.Top each pastry round with feta and caramelised onions. Serve.

Red onions produce a slightly sweeter result, but if you don’t have red, use either white or brown.
