1.Combine soy, garlic, cornflour, sugar and ginger in a bowl. Add chicken and turn to coat.
2.Heat oil in a wok on high. Stir-fry carrots for 2 minutes. Add chicken mixture and cook for 5 minutes, until chicken is golden. Add wine, green onions, bok choy and beansprouts and stir-fry for 2 minutes.
3.Add noodles and coriander and cook for another minute, until heated through. Serve.
