Method
1.Combine prawns, garlic and ginger in a small bowl and toss well. Set aside.
2.Heat oil in a large frying pan or wok on medium. Add onion and stir-fry for 2 minutes until soft. Remove with a slotted spoon. Add bok choy and stir-fry for 2 minutes. until bright green. Return onion to pan and cook for 3 minutes, until vegetables are tender.
3.Stir in prawns, sugar, vinegar and soy sauce. Cook for 1 minute, to heat through. Serve in individual bowls with rice.
