Fruity Anzac biscuits

Dried apricots and cranberries are a fun addition to the classic Anzac biscuit recipe, and these sweet treats couldn't be easier to make!

Ingredients

Method

1.Preheat oven to moderate, 180°C (160°C fan-forced). Grease and line 2 large oven trays with baking paper.
2.Combine oats, flour, sugar, coconut and fruit in a large bowl.
3.Combine butter, syrup and bicarbonate of soda in a small saucepan over low heat. Cook, stirring, 2-3 minutes, or until butter melts.
4.Add butter mixture to oat mixture; mix well.
5.Roll level tablespoons of mixture into balls. Place on prepared trays, about 5cm apart. Using a fork, flatten slightly.
6.Bake 18-20 minutes, or until golden. Cool on trays (biscuits will firm).
