Method
1.Bring potatoes to the boil in salted water and simmer for 5 minutes. Drain and completely cool. Grate into a bowl and season liberally.
2.Coat the base of a non stick pan with olive oil, heat and batch fry 2 Tbsp amounts on both sides until golden and crispy, keeping them warm in the oven as you go.
3.Serve topped with torn winter leaves and dressed soft boiled eggs. Drizzle with good quality olive oil and season to taste.
