Ingredients

Method

1.Preheat oven to 150°C. Lightly grease and flour a 10 x 20cm loaf pan, shaking out excess.
2.In a medium bowl, using an electric mixer, beat butter and sugar together until light and creamy. Beat in essence.
3.Add eggs, one at a time, beating well after each addition. Sift flour and baking powder together. Fold into creamed mixture alternately with milk until combined. Fold in sultanas.
4.Spoon mixture into pan. Bake for 1 hour 20 minutes, or until cooked when tested with a skewer. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Store in an airtight container.

This loaf freezes well – either whole or in slices.
