Olive oil doughnut
1.Combine egg, cream, orange rind and juice, olive oil and 1/2 cup of sugar. Add flour and mix until a soft dough forms. Using one hand, knead in bowl for 1 minute, until smooth.
2.Divide dough into 10 portions. On a lightly floured surface, roll each portion into a 15cm log. Pinch ends together and smooth with fingertips to make doughnut-shaped rings.
3.Combine remaining sugar and cinnamon in a shallow bowl and set aside.
4.Heat extra oil in a deep-fryer to l80°C or add enough oil to a large, deep saucepan to reach a depth of 5cm and heat on medium until a cube of bread turns golden in 30 seconds. Deep-fry doughnuts in batches, turning once, for 3-4 minutes, until golden. Drain on paper towel. Cool. Dust with cinnamon sugar. Serve.
