Coconut stars

These coconut morsels come out of the fridge ready for the party. Great for summer when you don't want the oven on.

Ingredients

Method

1.Grease and line a 30x20cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
2.Place milk, coconut, icing sugar and vanilla in a medium bowl. Using clean hands, combine mixture. Press into prepared pan; smooth surface. Chill for 1 hour to set.
3.Remove coconut slice from pan. Using a 6cm star pastry cutter, cut stars from slice. Spread white chocolate over top of stars; sprinkle with cachous. Set.

For even more sparkle, you could also decorate stars with some coloured sugar or edible glitter. Serve leftover coconut mixture sprinkled over ice-cream and fresh fruit.
