Method
1.Combine couscous and boiling water in a medium bowl; cover, stand for 5 minutes, fluff with a fork occasionally. Thickly slice zucchini; cook on a heated oiled grill plate (or grill or barbecue) for 2 minutes each side or until tender and browned.
2.Combine zucchini, couscous, fresh mint leaves, crumbled feta, olive oil and lemon rind and lemon juice.
