Grilled nectarine, prosciutto and pistachio salad

A delicious summer salad, perfect for an al fresco dinner

Ingredients

Method

1.Place molasses and oil in a screw-top jar; shake well. Season.
2.Heat a grill plate (or barbecue) over medium-high heat. Lightly spray nectarines with cooking oil; cook nectarines until charred on both sides.
3.Arrange nectarines, mozzarella, prosciutto and rocket on a large platter. Drizzle with dressing, sprinkle with pistachios and pomegranate seeds.

You can use peaches or rockmelon wedges instead of nectarines, if you like.
