Method

Hundreds & thousands biscuits

1.Beat butter, essence and sugar in a small bowl with an electric mixer until smooth; add the egg and milk, beating until only combined. Stir in sifted flours and mix to a soft dough.
2.Knead gently on lightly floured surface until smooth; cover and refrigerate for 30 minutes.
3.Roll dough between sheets of baking paper until 5 mm thick. Cut into 5 cm rounds and place about 3 cm apart on greased oven trays.
4.Brush rounds with extra milk and sprinkle with hundreds and thousands. Bake in a moderate oven for about 12 minutes or until firm. Cool on trays.
