1.Preheat an oven-grill to high. Line a baking tray with foil.
2.Place tomato on prepared tray in a single layer. Spray with oil. Season with freshly ground black pepper. Grill for 3 to 4 minutes or until tender. Top tomato with bocconcini.
3.Using a spatula, transfer half tomato and half bocconcini to a large serving plate. Sprinkle with half basil. Top with remaining tomato and bocconcini.
4.Whisk together oil and vinegar; drizzle over salad. Top with remaining basil. Serve at once.
Use regular tomatoes to save money. Serve salad with vegetarian sausages or burgers. Bocconcini is a fresh Italian cheese available from the deli and refrigeration aisle.
