Ingredients
Method
1.Preheat oven to very hot, 220°C. Lightly grease and line an oven tray with baking paper.
2.Melt 20g butter in a frying pan on medium. Saute onion 3-4 minutes, until beginning to turn golden. Remove from heat.
3.Sift flour into a bowl. Rub in remaining butter, using fingertips, until mixture resembles breadcrumbs. Stir in half the cheese, basil and mustard.
4.Make a well in the centre of the flour mixture. In a jug whisk milk, egg and water together. Pour into dry ingredients. Using a butter knife, mix quickly to form a soft dough.
5.Turn out onto a lightly floured board. Gently press out into a 3cm thick round. Place on tray and cut into 8 even wedges. Spread onion over top and sprinkle with remaining cheese. Season to taste.
6.Bake 15-20 minutes, until scones are well risen and golden on the bottom. Transfer to a wire rack to cool. Serve warm or cold with butter, if liked.
