Stuffed eggs
1.Place eggs in a medium saucepan; cover with cold water. Bring to the boil over moderate heat, gently stirring (helps centre yolks). Boil without stirring for 8 minutes; drain and rinse under cold water. Peel and cut in half.
2.Scoop out yolks and place in a medium bowl; mash with a fork. Stir in cheeses, mustard, onion and parsley.
3.Spoon mixture into egg white cavities. Cover with plastic food wrap; chill for 15 minutes. Serve.
For a main meal, serve eggs with potato salad. These eggs are packed with protein and ideal for the lunch box.
