Method

1.Preheat oven to 200°C. Spoon 1 teaspoon of oil into each recess of a shallow muffin pan. Heat in oven for 5 minutes.
2.Sift flour and salt together into a bowl. Make a well in the centre of the flour and gradually blend in combined milk and egg until smooth (you can use a hand food processor blender or to do this).
3.Divide batter evenly between muffin holes. Bake for 15-20 minutes or until puffed and golden.
4.Meanwhile, make Salsa; in a bowl, combine all ingredients except feta. Season to taste. Spoon salsa onto puddings and finish with a little feta and parsley, to serve.

Do not make batter until you are ready to cook the puddings. Put them into a hot oven. Puddings will deflate to make a perfect case for the salsa.
