Roast potatoes

The secret to perfect roast potatoes is par-cooking them before tossing in the oil. They come out of the oven crisp and golden.

Method

1.Preheat oven to 180°C. Par-cook potatoes by boiling in salted water for 10 minutes, and draining well.
2.Place a large baking dish in the oven for 5 minutes, until hot. Add potatoes, oil, butter, garlic and rosemary, tossing to coat. Season to taste.
3.Bake for 30-35 minutes, until golden and tender, tossing occasionally.
