1.Heat oil in a large saucepan on high. Deep fry wonton wrappers in batches for 1 minute until golden. Drain on paper towel. Break 4 wonton wrappers into pieces.
2.In a large bowl, combine prawns, cos, bean sprouts, mint and broken wonton wrappers.
3.For chilli and lime mayonnaise, whisk together all ingredients and season to taste.
4.To serve, place 1 unbroken wonton wrapper on each plate. Top with prawn salad. Sprinkle with remaining wonton wrappers, broken into pieces. Drizzle over dressing and serve immediately.
You could replace the prawns in this dish with cooked crab, lobster or bugs, if you like.
