Method

1.Preheat oven to hot, 200°C.
2.Cook potatoes in boiling, salted water, 8-10 minutes, until just tender. Drain well.
3.Squash potatoes with the back of a fork. Place on a baking tray with garlic. Drizzle with oil, season. Bake 15-20 minutes. Toss herbs through, bake further 5 minutes. Reduce oven temperature to slow, 150°C.
4.Cut pork steaks in half, lengthways Pound pork until 3-4mm thick.
5.Dust steaks in seasoned flour. Dip in egg and coat with breadcrumbs, pressing firmly. Chill 10 minutes.
6.Heat oil in a frying pan on high. Fry pork 2-3 minutes each side, until golden and cooked through. Drain on paper towel. Keep warm in oven.
7.Peel garlic, mash and stir into mayonnaise. Season to taste. Serve schnitzels with garlic mayonnaise and baked potatoes.
