Method
1.Preheat oven to moderately slow, 160°C. Lightly grease and line 2 oven trays with baking paper.
2.In a medium bowl, using an electric mixer, beat butter and sugars together until pale and fluffy. Add egg and vanilla, beating well.
3.Sift flour and soda together. Fold lightly into creamed mixture with chocolate chips, oats, raisins and walnuts until combined.
4.Roll tablespoonfuls of mixture into balls and arrange on trays 5cm apart to allow for spreading. Bake 15-20 minutes, until golden brown. Cool on tray 5 minutes. Transfer to wire rack to cool completely.
Biscuits will be soft after baking. Allowing them to cool on trays will firm them up. You can use white, milk or dark chocolate bits – or a combination.
