1.In a bowl, mix together the parsley, basil, garlic, chilli flakes (if using), capers, panko crumbs and 4 tablespoons of the oil. Season with salt and a little pepper if not using chilli.
2.Wipe mushrooms with a damp cloth on the outside of the caps and trim the stalks. Put mushrooms, cap side down, in a shallow ovenproof dish. Sprinkle mushrooms with a little salt, then spoon on the topping. Sprinkle the parmesan cheese over and drizzle with remaining oil.
3.Bake for 10-12 minutes in an oven preheated to 200°C (fan forced).
