1.Preheat oven to hot, 200°C.
2.Brush potatoes with oil. Place in oven on shelf (or use an oven tray). Bake 1 hour, until tender.
3.Slice through the centre of each potato. Season to taste and serve topped with sour cream and chives or fillings of choice.
