Five spice pork with couscous

Packed full of flavour, this pork and couscous dish is wonderfully fragrant and perfect for a quick, tasty weeknight dinner.

Ingredients

Method

1.Heat oil in a large frying pan over moderate heat. Add onion and carrot. Cook, stirring, 3 minutes. Add five spice powder. Cook, stirring, 1 minute, or until fragrant. Add mince. Cook, stirring with a wooden spoon to break up lumps, 5 minutes or until browned. Add tomato and 1 cup water. Season. Reduce heat to low. Cook, covered, 15 minutes or until reduced slightly.
2.Meanwhile, place couscous, butter and spinach in a medium heatproof bowl. Stir in 1 cup boiling water. Cover with plastic food wrap. Set aside 5 minutes, or until liquid is absorbed. Using a fork, fluff and separate grains. Stir in chopped almonds.
3.Serve mince mixture with couscous. Sprinkle with extra almonds.

You could use chicken or beef mince instead of pork mince. For a gluten-free option, replace couscous with quinoa or rice.
