Ingredients

Method

1.Preheat oven to moderately slow. 160°C. Line 2 trays with baking paper.
2.Sift flours and icing sugar together into a bowl. Rub in butter using fingertips, until mixture resembles breadcrumbs. Add combined egg and milk and mix until dough comes together.
3.Turn out onto a lightly floured surface. Knead gently. Halve mixture. Knead cocoa into one portion.
4.Roll half tablespoonfuls of plain dough into 10cm logs. Repeat using chocolate mixture.
5.Twist one plain and one chocolate log together, pressing ends together. Arrange on prepared tray.
6.Bake for 15-20 minutes until firm. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely. Store twists in an airtight container.

makes 24 If the weather is hot, wrap dough in plastic wrap and chilli until easy to handle
