Method

1.Preheat oven to moderate, 180°C (160°C fan-forced). Line a large baking tray with baking paper.
2.Combine coconut, almonds and sugar in a bowl. Add egg white and essence. Mix well to combine.
3.Using wet hands, shape coconut mixture into 24 balls, then pinch each ball into a pyramid shape.
4.Place on prepared tray. Bake 15 minutes, or until just golden. Cool on tray.
