Chicken parmigiana

Quick and easy chicken parmigiana topped with tomato passata with fresh spinach and sprinkled with multiple cheese creates mouth-watering flavours.

Ingredients

Method

1.Preheat oven grill to hot, 220°C.
2.Heat oil in a large frying pan on medium. Fry chicken for 2-3 minutes each side, until the meat is starting to colour and almost cooked through.
3.Transfer to a baking dish. Spread each schnitzel with 1 tablespoon passata. Top with spinach or basil leaves and sprinkle with combined cheeses.
4.Grill for 3-4 minutes, until cheese is melted and golden. Serve with rocket leaves and cherry tomatoes, drizzled with a little olive oil.

You can use your favourite pasta sauce or leftover pesto in place of passata.
