Method

1.Preheat oven to 220°C. Lightly grease an oven tray.
2. Sift flour into a large bowl. Rub in butter lightly using fingertips. Stir in sugar.
3.Make a well in centre of flour mixture. Pour in buttermilk all at once. Using a bread and butter knife, mix quickly to a soft, sticky dough. Do not over-mix.
4.Turn onto a lightly floured surface. Knead gently. Press or roll out to form a 2cm round. Using a 5cm cutter, cut rounds from dough.
5.Place close together on tray Bake for 12-15 minutes until scones sound hollow when tapped. Cool on a wire rack.
6.Meanwhile, to make balsamic strawberries, heat butter in a medium frying pan on high. Add sugar and cook for 3-4 minutes until caramelised. Stir in strawberries and vinegar. Cook 1-2 minutes, until strawberries soften.
7.Serve scones topped with balsamic strawberries and combined cream and vanilla.
