Vegemite bites

Kids will adore these vegemite-flavoured scones filled with more vegemite and sliced tomatoes.

Ingredients

Method

1.Preheat oven to 220°C (200°C fan-forced). Line a large baking tray with baking paper. Sift flours into a large bowl; add husks from sieve. Add sugar; stir to combine.
2.Whisk milk, oil and vegemite in a medium jug. Add soda water; stir to combine. Pour into flour mixture. Mix with a round-bladed knife until just combined. Don’t over-mix.
3.Turn out dough onto a lightly floured surface. Gently shape and press out to a 2cm-thick, 25x20cm rectangle. Using a lightly floured knife, cut dough into 32 squares. Place squares, side by side, on prepared tray. Brush tops with extra milk.
4.Bake for 15-20 minutes or until risen and golden. Split and spread bases with spread and extra vegemite. Top with tomato and extra tops.

Use rice or almond milk instead of soy milk; price will vary.
