Smoked salmon roulade
Caper creme fraiche
Method
1.Preheat oven to very hot, 220°C. Lightly grease and line a 26 x 32cm Swiss roll pan with baking paper.
2.Melt butter in saucepan on a medium heat. Add flour. Cook, stirring, for 1 minute. Remove from heat. Gradually blend in milk until smooth. Return to heat, cook, stirring constantly, until mixture boils and thickens. Simmer for 3 minutes.
3.Transfer roulade to a large bowl. Stir in egg yolks, parmesan and 2 teaspoons dill.
4.Using an electric mixed mixer, beat egg whites in a clean bowl until soft peaks form. Fold gently through mixture. Pour into prepared pan. Bake for 10- 12 minutes until golden and roulade springs back when lightly touched.
5.Turn roulade immediately onto a clean. Soft tea towel. Remove paper lining. Roll up roulade lengthways with tea towel. Allow to cool for 5 minutes. Unroll, cover with salmon and sprinkle with remaining dill. Roll up lengthways without tea towel.
6.To make caper creme fraiche, in a small bowl, combine creme fraiche, capers, lemon zest and dill. Season to taste.
7.Sprinkle warm roulade with parmesan. Serve, sliced, drizzled with caper creme fraiche.
