Method

1.Heat oil in a large saucepan on medium. Add potato and beans; cook 3 minutes, until lightly coloured.
2.Add tomato and any juice, olives and chilli. Season to taste; cook another 5 minutes, stirring occasionally. Stir through anchovies and parsley.
3.Meanwhile, cook pasta shells in a large saucepan of boiling, salted water according to packet directions; drain. Return to saucepan with potato mixture; toss to combine. Serve immediately with parmesan.

These large ribbed pasta shells are great for sauce to cling to, and for taking hold of the delicious flavours of the dish.
