Ingredients

Method

1.Preheat the oven to 180°C.
2.Line a 24cm pie dish or similar with the pastry, trimming to fit neatly and chill until required.
3.Heat the oil in a frypan and sauté the onion, chorizo and red capsicum over a medium heat for 3-4 minutes until coloured and fragrant. Scatter the potatoes over the pastry then top with the chorizo mix.
4.Whisk the eggs and cream together until foamy then stir in the seasoning and herbs.
5.Pour the egg mixture over the potato and chorizo and bake in the preheated oven for 35-40 minutes, or until golden, puffed and set in the centre.
