Shaved ham and egg puff pastry pie

This easy pie recipe sees golden puff pastry topped with Dijon mustard, tomato salsa, shaved ham and eggs. Freeze any leftovers for a fuss-free breakfast or snack

Method

1.Preheat oven to 200°C. Place an oven tray in oven to heat (see tip). Lightly grease a 23cm shallow pie plate.
2.Join pastry together, then ease into pie plate to line. Trim edges and prick base about 6 times with a fork.
3.Spread mustard over pastry base. Top with ham. Break eggs into a cup, then gently slide into pie. Season.
4.Place dish on hot oven tray. Bake for 25-30 minutes until pastry is golden and cooked through.
5.In a bowl, combine tomato, onion and chives. Season and serve pie cut into wedges, accompanied with tomato salsa. Freeze leftovers in wedges.
  • Heating the tray in the oven will help to crisp the bottom of the pastry.
