Method
1.Preheat oven to 210°C (190°C fan-forced). Line 2 large baking trays with baking paper. Using a vegetable peeler. cut kumara into long, thin lengths. Pat dry with paper towels.
2.Spread kumara on prepared trays. Spray with oil. Bake for 10 minutes. Remove trays from oven, then toss and spray with oil. Bake vegetables for 10 minutes more or until crisp.
3.Meanwhile, place salt, pepper and paprika in a small frying pan over moderate heat; cook and stir for 1 minute or until fragrant. Transfer to a small heatproof bowl. Cool.
4.Serve kumara chips sprinkled with the salt mixture.
Serve with roast chicken or fish. To cook with roast, place trays separately on bottom shelf of oven; cooking times may vary. While roast is resting, return both trays to oven and reheat.
