Nicoise wraps

This quick and tasty lunch packs all the flavour of a classic nicoise salad into a convenient wrap.

Method

1.Make dressing by whisking together all ingredients in a jug. Season to taste.
2.Place tomatoes, capsicum, artichokes, tuna, eggs, cucumber and basil in a large bowl and combine. Toss dressing through salad mixture.
3.Place each lavosh on a flat surface and top with salad. Roll up, halve and serve.

To hard-boil eggs, place in a saucepan of cold water and bring to the boil. Reduce heat and simmer for 4-5 minutes. Cool under cold water. Prepare close to serving time or cover with plastic wrap.
