Method

1.Preheat an oven-grill to high. Place bread on a baking tray. Grill bread for 1-2 minutes each side or until golden brown and crisp. Cool. Break bread into bite-size pieces.
2.Lightly grease a baking tray. Place fish on prepared tray. Brush with garlic butter; sprinkle with 2 tablespoons dukkah. Place under grill; cook for 2-3 minutes each side or until golden brown and cooked.
3.Combine cucumber, tomato, parsley, shallot, bread pieces, juice and oil in a large bowl. Sprinkle salad with extra dukkah. Serve fish with salad and lemon wedges.

Dukkah, an egyptian mix of herbs, nuts and spices, usually contains cumin, sesame seeds, coriander, salt, pepper and nuts, such as pistachio, almond or hazelnut. Fattoush is a Lebanese bread salad. To make garlic butter instead of buy, stir half a crushed garlic clove into 2 tablespoons soft butter.
