1.To make Tartare Sauce, combine all ingredients in a small bowl. Season to taste.
2.Heat 2 tablespoons of oil in a large frying pan on high. Lightly dust fish with combined flours.
3.Cook in batches, adding remaining oil as you go, for 2 minutes each side, until crisp and cooked through. Drain on paper towel and serve with Tartare Sauce, chips and lemon slices.
Season the flour with salt and pepper or any other spice you iike before dusting the fish. Rice flour helps give the fish a crisper crust.
