Bacon and egg puffs

Why not surprise Mum with breakfast in bed or make her brunch? These tasty bacon and egg puffs are a great start to the day.

Ingredients

Method

1.Preheat oven to 200°C. Generously grease 6 large muffin tins.
2.Line each muffin hole with a rasher of bacon. Don’t worry about the base, just the sides will do.
3.In a jug, to make pouring easier, whisk together the eggs, milk and cream, then mix in the chives and salt and pepper.
4.Pour mixture into the tins and place in the oven to bake for 15-20 minutes. They should puff up nicely and the egg mixture will be just set.
5.Remove from the oven and cool for 5 minutes.
6.Gently remove from the tins and serve with a spoonful of your favourite chutney or relish on the side.

This is such an efficient way to prepare “bacon & eggs” for a crowd.
